
This gourmet dish is made of streamed Mahimahi Fillet drizzled in creamy savory dill sauce. Simply a delicious treat.
Ingredients:
- 3 pcs. Citra Mina Mahi-Mahi fillet (8-9oz)
- Olive oil
- Salt and pepper to taste
Creamy Dill & Mustar Sauce:
- 2 tbsp. butter
- 3 tbsp. all purpose flour
- 1 1/4 cups fish stock
- 1 tbsp. white wine vinegar
- 3 tsp. freshly chopped dill
- 3 tbsp. wholegrain mustard
- 2 tsp. sugar
- 2 egg yolks
- Salt and pepper to taste
Procedure:
- Marinate the Citra Mina Mahi-Mahi fillets with salt and pepper.
- In a pan, add oil and pan-fry the mahi-mahi fillets until light brown. Remove from heat.
- For the creamy dill and mushroom sauce:
- Melt the butter in saucepan. Stir in the flour and cook for 1-2 minutes over low heat, stirring constantly. Turn of the heat. Gradually stir in the hot stock.
- Return the pan to the heat. Bring to boil, stirring all the time, then lower the heat and simmer for 2-3 minutes. Remove from heat again and pour in the vinegar, dill, mustard and sugar while beating constantly.
- In a separate bowl, beat the egg yolks and gradually and add a small quantity of the hot sauce. Add the contents of the bowl to the sauce, whisking vigorously. Place the pan back to the stove and continue to whisk the sauce over a very low heat for 1 minute.
- Add salt and pepper to taste
- Pour the sauce over the pan-fried Mahi-Mahi fillets. Serve at once.
- Serves 3-4 persons.
