
Thick and meaty Blue Marlin Steak grilled to perfection, then generously drizzled with savory lemon and caper sauce.
Ingredients:
- 2 pcs. Citra Mina Blue Marlin Steak (12 oz)
- 1/4 cup lemon juice
- Salt and pepper
- Olive oil
Lemon and Caper Sauce:
- 1/4 cup butter
- 1 white onion, chopped
- 1/2 cup fish stock
- 1 1/4 cup white wine
- 1 large lemon
- 2 tbsp. capers, drained
- 1 cup cream
- Salt and pepper
Procedure:
- Marinate the Citra Mina Blue Marlin Steak in lemon juice, salt and pepper. Grill or pan-fry the Blue Marlin Steak until cooked.
- For the lemon and caper sauce:
- Melt the butter in saucepan. Add the onion to the pan and saute over medium heat for 5 minutes or until lightly brown. Add the fish stock and pepper. Pour the white wine and heat the mixture until it barely simmers. Cook over a gentle low heat for 20 minutes.
- Extract juice from the lemon then add to the mixture.
- Add the capers to the sauce. Bring to simmer, then lower the heat. Pour the cream while gently stirring. Season with salt and pepper.
- Pour mixture over to the Blue Marlin Steak.
- Serves 2-3 persons.
